I've always wondered this, but why, thematically, can't an Angel use Acid enchantments and a Demon use Electric enchantments?

Angels can't use acid damage because acid is caustic and icky and dirty and smells bad. Throwing acid at people is nasty and underhanded. It doesn't fit the theme of angels.

Demons can't use electric because of the thematic associate of lightning bolts with divine beings and heavens and purity. Demons are more chthonic, even though they can fly.

I have a better explanation.

Angels can't use acid because they are not fun and demons have issues tripping electric because their trip is bad.
