Want to start a new character but completely new here. What is best? I know to not take any melee skills since I cast spells but beyond that I'm completely clueless.

Hey there and welcome!
So you are looking at going defiler as your tier 2 class correct? The real question right now is going to be what skills do you currently have, and what tier 3 class do you want to take? Since you are going defiler then you will be limited to evil MO spellcasting exits (though these exits don't always have to use spells). When you get to tier 3 and choose a class, the skills available to you will have at least 2 combat options favored among them, so you're going to want to plan it and you're going to want to take tier 1 and tier 2 skills that will compliment your tier 3 skill selections.
Aside from asking here, you can also check out the New Player Guide and Sac’s Guide to Not Regretting Your Life Choices a read, though with character resets available now, it isn't the end of the world if botch your build. Then check out the Character Planner, it comes in handy quite a bit for figuring out the path you will take. Welcome to Nexus! Hopefully we can help you out a bit around here.. I see you say a future Defiler, but have you thought about what tier 3 class you will wind up being. As a Defiler, when you hit level 20, you will be able to choose another class to be your final. As a Defiler exit, you will be able to choose from Corruptor, Dark Oppressor, or Wyrm Master. I urge you to check each class out, decide which you would want to go with, decide which skills you would want from those classes and work your way backwards from there. Example: If you would like to be a Dark Oppressor with the Crown of Pain skill, it uses the Ranged Weapons tree, so you would as a mortal be able to take the Firearms tree as skills to use while you level up but also be beneficial to you in the long run.
That link covers all the classes. If you do Discord at all, many are quick to chat in the General channel. There is even a tab for New Players which is perfect for questions. Also, if you happen to be in a faction, many factions have their own Discord channels you would just have to ask for a link or look for it on their board!

It sounds like you're using spells as your combat tree? If so, Corruptor is your best bet (non-utility spells currently aren't great for most classes). They're also the most offensively oriented defiler exit so they've got that going for them.
Without seeing your build:
Melee is solid on a corruptor exit alongside spells because pet stealing uses it for accuracy.
Search = great for searching which you'll do a *lot* for most methods of levelling.
Strength: depends on how much crap you carry about. I love it though, 70 space is nice.
Sense magic: you're a caster it's close to essential.
TLL: Mana regen that creates mana instead of stealing it from people. Grab it, dark heart can be a pain to manage.
T2:
Alchemy: very useful in any faction. Less useful if you're feral. Useful for levelling too.
Blood Ice: Heals you for a bunch and you're the best suited T3 for it. Less useful early on, only really worthwhile once you can hit 10 damage reliably.
Soul Ice: You have spell gems for mana regen.
Dark heart: Mostly for downtime if you don't have leylines available to recharge gems.
Poison: Fun because it lets them respawn with it. Doesn't directly boost your damage usually though.
Spells etc: if you're enchanting grab the cheapest of each *non impact* type. If you're not impact is the usual type although not fire/death is generally fine. Reveal is nice, sharp vision and guided blade are good too because your accuracy isn't great.
T3 is dependent on your class obviously.
By and large DO= enable others by disabling foes, Wyrm Master = be lazy summon pets to kill people, Corruptor = murder people with spells and also have a handful of pets.
